6 slices bacon

2 large organic tomatoes, sliced

Sea salt

Freshly ground black pepper

8 slices low-FODMAP gluten-free or sourdough bread

¼ cup butter, melted

¼ pound Gruyère or cheddar cheese, sliced or shredded

1 . In a large skillet over medium heat, cook the bacon to desired doneness, 3 to 5 minutes per side.

2 . Meanwhile, season the tomato slices lightly with salt and pepper and set them aside.

3 . Lightly brush one side of each slice of bread with melted butter and set the buttered bread slices aside.

4 . Remove the cooked bacon from the pan and drain the bacon grease. In the same pan over medium heat, place 4 slices of bread, buttered side down. Top each with 2 slices of cheese and cover the pan for about 2 minutes, or until the cheese begins to melt and the bread is golden brown. Meanwhile, cut each piece of bacon in half.

5 . Uncover the pan. Place 3 pieces of bacon and tomato slices on top of the cheese on each sandwich. Top each sandwich with its second slice of bread, buttered side up. Flip each sandwich over and cook until the second side is golden brown. Serve immediately.
